I pulled into Taco Giro on Colossal Cave Road last Tuesday afternoon, and the remodeled exterior immediately caught my attention. Inside, the casual Mexican grill atmosphere was bright and welcoming, with clean lines and a dining room that felt both modern and comfortable. Our server brought chips, salsa, and bean dip to the table right away—a nice touch that let us snack while deciding what to order from the extensive menu.
I went with the steak wet burrito with green sauce, which arrived absolutely massive and smothered in a tangy tomatillo-based green sauce that had just the right amount of heat. The steak inside was tender and well-seasoned, mixed with rice, beans, and cheese, all wrapped in a flour tortilla that somehow held everything together despite the generous filling. The presentation was beautiful—not something you always expect from a casual Mexican spot, but Taco Giro clearly takes pride in how their dishes look.
My friend ordered the bacon-wrapped shrimp, which came with rice and beans and looked incredible. Each shrimp was wrapped in crispy bacon and grilled to perfection, with a slightly smoky char that complemented the sweet, tender shrimp inside. The portion was large enough that we ended up sharing, and I'm glad we did—it's easily one of the best seafood dishes I've had at a Mexican restaurant in Arizona.
The menu also features mariscos and molcajetes, giving you plenty of seafood options if that's your preference. I spotted a steak taco salad heading to another table that looked enormous—served in a crispy tortilla bowl and piled high with lettuce, meat, cheese, and toppings. The portions here are definitely large enough to share or save for later.
One of the best things about Taco Giro is their happy hour, which runs Monday through Thursday from 3 PM to 7 PM. You can get cheap margaritas and beer during those hours, making it a great spot for an early dinner or after-work gathering. The service was notably quick—our food arrived within ten minutes of ordering, which is impressive given how busy they were.
